The Company is comprised of two Hibachi Japanese steakhouses where customers' food is cooked at their tables in an entertaining and fun environment. Its chefs cook a unique mix of dishes, including filet mignon, Hibachi lobster, shrimp, Teppan steak, and seafood. The restaurants also feature sushi bars that serve fresh seafood, including sushi, sashimi, and hand rolls. The Company processes over 200,000 orders per year, and its top four customer markets during 2020 were families (40% of sales), regular patrons (30%), business clients (20%), and other customers (10%). The Company operates from two shareholder-owned restaurant loca ons (5,200 and 5,580 square feet, respec vely). They are currently staffed by 50 full- me and 10 part- me employees.
